Interpolation mode gives you the option to change the movement of the animated object and how slow/fast it starts off and ends. By applying linear to your keyframes, the object will move at a steady pace because the graph will be a complete straight line. By applying bezier to your keyframes, the animated object will ease in gradually (start slow) and ease out gradually (end slow) because there is a curve in the graph. You can adjust how much ease you want on the object by opening the graph of the keyframes and changing the curves.
